Plan With Me! - February Week One

Another week and another plan! I’ve got a few things I want to keep in mind as I plan this week.
I want to try to keep my spending DOWN this month. So, I’m challenging myself to spend no more than $100.00 a week. I have a good stockpile so this shouldn’t be an issue.
It’s Spirit week at the kid’s school so I need to make sure we have what we need for that. I. Hate. Spirit. Week. Am I the only one???
We are having our first home study visit for Foster Care this week, so I need to ensure the house is in order this weekend and into next week.
It’s Anna’s turn to pick a dessert for Thursday so I’ll have to get that before I place my order.
Sophie's testing her multiplication tables at school so I need to find an app or print some tests. Or both!
Dinner Menu
MONDAY – Confetti Soup
I’m going to try to substitute the spinach for some salad greens that need to be used asap. I also have a handful of small potatoes that are getting soft and need to be used.
TUESDAY – Eggs and Bacon
I have bacon in the freezer and the chickens are giving me 8 to 10 eggs a day. Easy peasy lemon squeezy!
WEDNESDAY – Spaghetti and Salad
I already have everything we need for this meal and it’s a crowd pleaser. Add some rolls or garlic bread and everyone will be happy. I’m going to try to bake once, use twice and make the rolls for the roast beef sandwiches at the same time.
THURSDAY – Hot Roast Beef Sandwiches
I have a lot of deli roast beef that needs to be eaten. I’m going to put it in some beef broth to simmer and serve with fresh baked deli rolls and cheese.
FRIDAY – Meatloaf
I have a meatloaf in the freezer from my last bulk cooking day. I’ll serve it with some veggies and rice.
SATURDAY – Nachos
I have a HUGE stack of corn tortillas I need to use up. Add a touch of beef and cheese, both of which I have in abundance and we have ourselves a meal. Oh, and I have some frozen mashed avocado that can be used to make some guac.
SUNDAY – Tuna Melts
Again, I believe I have everything I need for this.
Kids Lunches:
Monday – Just crack an egg (s), Lunchable (a), soup (r)
Tuesday – peanut butter sandwich (r), jelly sandwich (a), lunchable(s) Wednesday – mac and cheese (r&a), oatmeal (s)
Thursday – Pizza! Their school server’s pizza on Thursday and all my kids are in.
Friday – Nana’s house!
Saturday – leftover/fend for yourself
Sunday - leftover/fend for yourself
Mom Lunches:
Salad’s or leftovers. I’ll just need some more shredded lettuce and ham for my salads.

Overall I need to ensure the kids had a good handle on their Spirit Week outfits the night before and also get a good cleaning list in order and start tackling it prior to Fridays home study visit. It should be pretty short but includes so larger tasks like, touching up some paint on our kitchen cabinets. Otherwise we will just keep the house tidy and go about our day as usual!
